Fabulous Food

I have made some pretty dishes lately for dinner!


Our Sunday dinner, crockpot Pot Roast was so incredibly tender and the pretty plate made for the perfect presentation!


This is my very own version of guacamole and I LOVE it!!! Take a little avocado, red pepper flakes, cumin, salt, and dried or fresh cilantro. Blend it all together and top it on a thinly sliced tomato above a crisp tortilla chip. A tasty little appetizer (but don't let them sit too long or the chip will go soggy).

Like Losing a Loved One

Dave's little Ford Escort has finally bit the dust. We had a tow truck come haul it away today. Poor guy was really choked up about the whole thing. You would have thought someone in the family died.


This is Dave's brave face as he says goodbye.


It served him well for nine years through dental school in West Virginia and residency in Colorado. He will miss it. While I am happy for the new addition in our garage - a 2006 Chevy Malibu in gold.

Earlier than the Pioneers

We FINALLY planted our garden. Yes, it is already June 26th and the odds of getting a harvest are totally against us. But hey, the pioneers didn't start planting crops until JULY 26 or so after they arrived in the Valley and they still had a good harvest. We're a whole month earlier!



(I know what you're thinking...it's really too shaddy back there to have a garden, but we're going to try. If it fails, we'll be planting a tree next year.)

To Do List

Yesterday I sat down and wrote out all the things that need to be done within the next week or less at home and at church. Then I wrote down all the things I want to do before the Summer ends and all the projects that need doing at our house sooner than later.

Let's just say I have never seen such a long To Do list. Ouch! And what's worse, I am certain I inadvertently left some things off the list. Also, let's not forget the things that need to be done again as soon as you check them off the list...dishes, laundry, vacuuming, etc. (I thought this weekend would be quiet, guess not.)

Busy Weekend

This has been one of the busiest, longest weekends on record.

It all began early Thursday morning as I took four of my Young Women down to Snow College for Youth Conference. We had a GREAT time and even took in the Manti Pageant while we were there. But we sure didn't get much sleep.




I had about two hours back at home on Saturday before I turned around and went in to work for a concert in the Tabernacle. Everything went very well with my event but the after-concert reception didn't end until almost 11:45 pm!

After a third short night in a row it was off to ward counsel meeting on Sunday, then the three-hour block meeting, followed by Father's Day visits to my dad and Dave's.

Needless to say, I am still extremely exhausted after this very busy weekend. Hopefully next weekend proves to be much more quiet.

Ensign Peak

Yes, it's true. I have lived my entire life in the Salt Lake Valley and until Sunday I had never hiked up to Ensign Peak. I really don't know how it escaped me for all these years, but it did.

Dave's grandma Huff lives near the trailhead and we were early for Sunday dinner so we decided to take a little stroll and work up an appetite. It took us about 15 minutes to get up -- with me in a long skirt and dress shoes -- and we got back just in time for dinner.




What a pretty view of the Valley from up there! I'm thinking we're going to have to make a YW activity out of it in the near future.

Memorial Day

These two guys were in heaven surrounded by all the emergency vehicles at the park on Memorial Day morning.



And these two guys both love ME! How lucky am I!
