Pretty Little Cheesecakes

I made these dainty cheesecakes for Lisa's baby shower over the weekend. They turned out delicious! I had a few left over that were stored in the fridge. Would you believe they were even better three days later?!



Orange Grove Mini Cheesecakes
12-18 vanilla wafers
2 packages (8oz each) cream cheese, softened
1/4 cup sugar
1/2 cup sour cream
1 teaspoon orange zest
1 teaspoon vanilla or orange extract
2 eggs

Place the wafers flat side down in a cupcake pan lined with paper muffin cups. In a large bowl, beat cream cheese and sugar until smooth. Add the sour cream, orange zest, and extract; beat well. Stir in the eggs one at a time until well blended. Fill muffin cups three-fourths full.

Bake at 350 degrees for 17-20 minutes or until set. Cool completely on a wire rack. Top each cheesecake with something colorful: raspberry preserves, candied orange zest, cranberries, strawberries, etc. Store in refrigerator.

Mmmm. Those look good. I am glad the thing in the center is something sugary and colorful and not a cinnamon clove. Don't get me wrong, a cinnamon clove is more than justified on a nice piece of baklava, I just don't think it would go well with cheesecake.
