What to do with a Turkey

I had this extra turkey in the freezer from Thanksgiving and finally decided to cook it up. Three hours in the oven while I worked outside in the yard and VIOLA! A beautifully cooked bird. But how do two people eat a 12 pound turkey?

(I guess we could have had a party and shared, but we didn't.)

Over the course of the next few days we ate it with wild rice, snacked on it cold out of the fridge, made it into sandwiches with my oh so delicious cranberry-apple-serrano-pepper jelly, baked it into a turkey pot pie, and my personal favorite dish, a classic turkey salad on white bread.

That last dish was so good I had to take pictures and share the recipe (which I made up my self).

Turkey Salad for Sandwiches
1 1/2 - 2 cups cubed turkey
1/3 cup re-hydrated craisins (boil them in a little water till they plump up some)
2 stalks diced celery
1 thinly chopped green onion
1/3 cup mayonnaise (or add more to your liking)
salt, black pepper, celery seed to taste

Slap on some bread and enjoy.
