What to do with a Turkey
I had this extra turkey in the freezer from Thanksgiving and finally decided to cook it up. Three hours in the oven while I worked outside in the yard and VIOLA! A beautifully cooked bird. But how do two people eat a 12 pound turkey?
(I guess we could have had a party and shared, but we didn't.)
Over the course of the next few days we ate it with wild rice, snacked on it cold out of the fridge, made it into sandwiches with my oh so delicious cranberry-apple-serrano-pepper jelly, baked it into a turkey pot pie, and my personal favorite dish, a classic turkey salad on white bread.
That last dish was so good I had to take pictures and share the recipe (which I made up my self).
Turkey Salad for Sandwiches
1 1/2 - 2 cups cubed turkey
1/3 cup re-hydrated craisins (boil them in a little water till they plump up some)
2 stalks diced celery
1 thinly chopped green onion
1/3 cup mayonnaise (or add more to your liking)
salt, black pepper, celery seed to taste
Slap on some bread and enjoy.

St. George & Friends
The Background Information & The Players:
Dave singed up to attend the annual Dental Seminar in St. George. Usually his family, being a family of dentists, goes down too. This year they all had other plans so I invited my parents. They brought along three other stowaways. Together, with our little dog, we all had a blast!
The Weather Report:
The sun was out, the sky was brilliant blue, not a cloud in sight. But the temperatures were cool and the wind ferocious. Still, it beats the snow we missed at home.
The Evidence:

Photo Gems
I'm looking at wedding pictures tonight and I ran across this precious gem of a photo. At our open house I wanted a photo with all our nieces and nephews. This is how it turned out.
One of the twins crying, Maggie refusing to participate, who knows where Kayla is at, Vera seems confused, the little boys all waiting patiently to be excused and Colette just chilling. Fabulous!
Then, of course, there is the favorite, America's Next Top Model audition photo at the temple.

Live Taping
I don't typically have the chance to watch KSL's Studio 5 lifestyle show because of my job. But today I had the opportunity to go to their very first live studio audience taping!
Me and 700 other women at their makeshift off-site location on stage at Hale Centre Theatre.
And they gave us gift bags filled with treats from The Sweet Tooth Fairy and funky earrings.
It was a great start to the weekend!
