New Year's Eve at the TAB

DINK-Hood

Dave and I have decided to label this banner year, "The last year of DINK-hood." (DINK = Dual/Double Income, No Kids.) Since getting married three years ago we've spoiled ourselves with fun and exotic vacations, going out to eat too often, and Apple-brand toys.

This Christmas certainly lived up to the nickname. Check out the stack of gifts we got to open from each other.

Next year we plan to focus all our spoiling on someone else and we can hardly wait!

Christmas Party Update

I'm happy to report that our Ward Christmas Party was a huge success! Many have told us it was the best food they've ever eaten at a ward function. Thank you, thank you all you wonderful ward members who helped cook all that good food.

P.S. I still have rolls, butter, and sour cream left over if anyone is interested. :)

Ward Christmas Party

This year in our ward the Sunday School President (my husband) and the Ward Mission Leader (a brand new father as of three days ago) were put in charge of the Christmas Party this coming Saturday. Do you know what that really means? It means that Chelsea is in charge of the Ward Christmas Party. As if I didn't have enough to do already what with the insane number of Christmas events at work, my weekly Young Women responsibilities, two counselors on maternity leave, and a new secretary.

Last night we did about half of the grocery shopping (and ran into President Uchtdorf while doing it -- which made Dave wonder why a member of the First Presidency was out shopping on a Monday night when he should be having Family Home Evening).

Back at home, as I worked hard to get things organized -- so that tonight we can deliver all the ingredients to the sweet Relief Society sisters who volunteered to help cook -- Dave sat on the couch with a bowl of ice cream watching a National Geographic program. No joke.

I can't wait until Saturday is over. (And Dave better be coming up with a really nice Christmas gift to make up for this added holiday stress.)

This is a photo from the day we first got the camera on Christmas last year. I haven't ever seen it before -- it's been lost on the camera all year long. Glad to finally have it back. :)

University of Utah vs Brigham Young University

We invited the family over for the big game the other night. While we all mostly enjoyed the final score I think we had more fun with the sideline entertainment happening live in the living room.

Our very own concert pianist. This baby loves to play and sing at the piano. I can hardly wait to see his talents blossom in the coming years.

(Sorry, I can't figure out why this wants to go sideways.) Here the young brethren of the family discussed the game, stats, score, players, etc. The future elders quorum.

She dressed up and staged her very own dance party. The keyboard, playing its pre-programmed songs, was her stereo. She stood on a stool and danced her heart out while telling all the younger kids to follow her. It was hilarious!

Love the Utah State Fair

I LOVE the Utah State Fair! I really don't know why, except that I have fond memories of Aunt Sherri taking me a couple of times when I was younger. So for the past few years I have pretty much forced my family to come with me. I think they are finally falling in love with it too!

It wouldn't be the Fair without trying out the big yellow tractors.

All the kids love the Little Hands Farm - maybe its because they've learned how to use the cow as a water gun.

If you're lucky you might end up at the Fair on the All-You-Can-Eat Ice Cream day. $3 for Aggie Ice Cream, BYU Creamery, Farr's, Creamies, etc. As much as your tummy can hold.

Doesn't this just make every kid want to live on a farm.

How to Host a Labor Day Pool Party

1. Check a few days before that no one has the Clubhouse reserved.
2. On Labor Day morning arrive at 8:25 and stake your claim in the Clubhouse kitchen.
3. Wait for the family to arrive - they'll trickle in from 8:30-9:00am.
4. Enjoy a fabulous breakfast of bacon pancakes, quiche, fruit, and cereal.

5. Change into your swim suits and go swimming, despite the threatening clouds above.

6. Lots of Hinckleys together in the pool will intimidate all other people already swimming and before you know it you have the entire place to yourself. Awesome!

7. Swim your heart out for an hour or two. (It never does rain.)
8. Reluctantly get out, dry off, clean up, and head on to other activities for the day.

10-Day Road Trip

Our summer vacations are now officially over. In the last four months we've been to Disneyland, twice to Logan, twice to St. George, Cedar City, and our final journey was a 10-day long round trip to Boise, Great Falls, and finally Yellowstone. We visited with family and friends, saw the beautiful mountains of the West, relaxed, and enjoyed limited cell phone coverage. :)

This is the wonderful family who took us into their home in Idaho, Dave's best friends from dental school. We spent the weekend riding around in their Yukon, just like two extra kids in the family.

I didn't get any decent pictures but we went to two fabulous restaurants: Brick 29 and Pizzal Chick. It was definitely a Food Network experience dining at these places. Brick 29 is a delicious bistro in the basement of an old Masonic temple. (The upstairs has an event center - might be kind of fun to be an event coordinator in an old temple.) Pizzal Chick was actually featured on Diners, Drive-ins, and Dives with Guy Fieri (I love that show). We got to meet the owner there who apologized for not wearing his tie-dye and said I looked really familiar - surely I had been in before. Nope but I hope to go back some day, it was that good!

After too short a stay with our friends we hopped on Hwy 21 and wound our way through the mountains to reach Great Falls. It took us nearly 12 hours to get there on all those back roads but the scenery totally made it worth the drive. We saw some really amazing views and passed through some quaint little mountain villages.

Our first stop in Great Falls was at the Air Force Museum. We received a personal tour of the inside exhibits from one of the servicemen. Dave had so many questions our 15-minute tour turned in to over 45 minutes. But it was fascinating to learn all about the work done in the silos of Malmstrom AFB.

Later that night we ate at MacKenzie River Pizza Co. There were so many enticing options on the menu my head was spinning. We settled on two pizzas that we shared but I would have loved to try one of everything. Then after dinner we played several rounds of Ladders with our lovely hosts. During practice Dave and I were scoring points with every throw but once the actual competition began we both froze. I lost every game. Sad.

We enjoyed a "junk food" picnic at Ryan Dam our last day there - cookies, pastries, and Capri Sun. It was as gross as it sounds.

(I know, I look like a politician holding all these babies.
They're my sweet niece and nephew and I'm trying to fill a void.)

The final stop on our 10-day road trip was Yellowstone National Park. We met up with my family and enjoyed a small portion of the wonders of the area. I forget how HUGE Yellowstone is. There was so much to do and so little time to do it in.

As we left the Park one day my little twin nephews begged to come with us in our car and it didn't take long before they were both sound asleep. Several miles before Madison Jct. the cars in front of us all stopped. We couldn't figure out what was going on. After being in the slow-moving pile up for over 45 minutes, we finally reached the cause of the problem - a small heard of buffalo walking along the road with the cars. They were so close I could reach out the window and touch them - but I didn't. We took a few pictures through the window (which are all on Dave's phone) and carefully passed by, relieved to finally be back at the speed limit. Before long the twins woke up and wanted their mommy. In an effort to console them, I showed them the pictures of the buffalo and told them how close they were to the car. Well, they took that story to heart and put their own three-year old spin on it. When we all arrived back at the condo, they ran to their parents telling them how the buffalo almost got in our car and how they had fought them off and saved us. It was hilarious. The next day, they both picked up big sticks to beat the buffalo if they came back. Oh, you gotta love three-year old imaginations.

We had such a great time on our road trip! We might have to do it again next year. Thanks to all our friends and family we met along the way who made it the best vacation of the summer!

Gem Theatre & Scoops from the Past

We read about this new little ice cream shop that just opened in Panguitch, Utah. So, on our way home from Cedar City, we took a detour to go check it out. It was totally worth the extra few score miles we put on the car.

Scoops from the Past ice cream parlour is actually in front of the Historic Gem Theatre. The Theatre was in ruins and a couple from Las Vegas bought it and spent money to rebuild. Now it is a quirky little oasis in the middle of small town Utah. Stop on by next time you go down that way.

Utah Shakespeare Festival 50th Anniversary

We took our annual trip down to Cedar City this month and Played! We saw The Music Man, A Midsummer Night's Dream, and Romeo and Juliet. We're going back down in October to catch Noises Off! and The Winter's Tale (which is my absolute most favorite play from the Bard so I have to make a return trip).

As part of the 50th Anniversary celebration there are several exhibits around town featuring artifacts from seasons past and an amazing collection of old publications on loan from London. Dave is leafing through a book of some of Shakespeare's plays that is at least 200 years old.

Utah State Capitol

I have finally seen the renovated Utah State Capitol and it is beautiful! Seriously one of the prettiest buildings in Utah, especially when you know a little about its architecture.

Vera is standing on skylights that take in the light from the rotunda and filter it down to the ground level.

Here the docent is explaining about the Butterfly Marble found on several walls in the main rotunda area.

I remember having a family picture taken on these steps when I was a kid and we came to see the capitol.

Continuing Education

Dave has been at a three-day dental course sponsored by Ultradent this week in Salt Lake City. The founder of Ultradent opened up his home to all attendees and their families the other night for a Western-themed party.

We filled up on fabulous food,

danced to a great band (Charley Jenkins and friends),

and ordered Sprites at the open bar -- though they definitely served much harder drinks.

I also met Dave's uncle Kelly for the first time and found out that Dr. Craven and I are 2nd cousins once removed on the Hinckley side.

Dave may not like all these continuing education courses he has to attend too much but I sure do have fun (remember St. George in April and now this). Can't wait to see which one he goes to next!

Independence Day

Triple Chocolate Cupcakes

Dave decided to make cupcakes the other day from a cake mix in the cupboard he has been eyeing since I bought it. Duncan Hines Triple Chocolate Decadent Cake. This comes with the the typical chocolate cake mix and then you add in a fudge and chocolate chunk goodness - triple chocolates!

So Dave worked at his task while I read the newspaper and when he finished he proudly came over to tell me that they were in the oven. But, he said, he didn't add in the fudge and chocolate chunk mixture because he tasted it and it was gross. So he left it out, making instead a single chocolate decadent cake. I chided him for not putting it in and tried to figure out how to use it -- you just can't waste good chocolate like that.

When the cupcakes came out of the oven I cut large holes in several of them, spooned in the second and third chocolates, covered them with some cherry frosting I found in the fridge and topped them off with a maraschino cherry. They were adorable and very good -- triple chocolate and double cherry. Yummy!

A quiet weekend down south

I spent the weekend in St. George, again. This time I went down with my mom and aunt and left Dave at home. While Dave reverted to his days of bachelorhood -- falling asleep on the couch with all the lights and tv on -- I enjoyed my quiet, relaxing few days in the sun. I went to bed early, took a walk every morning, worked out in the gym, went on a couple of free tours, read a book, and just breathed. I really need to take time to breathe more often.

On Friday we went to the Jacob Hamblin Home and the St. George Tabernacle. The sister telling the story of the Tabernacle was so adorable we stayed through two tours just to hear her retell the history of that beautiful building.

The next day we discovered that the Biggest Loser Resort at Fitness Ridge in Ivins gives free tours at 12:30 Monday-Saturday. We called to let them know we were coming and headed on over. They showed us around the facility, the workout rooms, pool, and kitchen. It was awesome to see what they do there. I might even want to vacation there some day -- hopefully, not because I have to but because I want to. :)

Random Happenings

We have been busy the last few weeks but I don't have any pictures, and we all know how I hate blogging without pictures.

* We laid sod in our backyard, a whole 144 square feet of it!

* We ate a hot breakfast at the annual Woods Cross Memorial Day Celebration in the cold rain. Then ran to RC Willey and took the second to last $25 coupon they were handing out at the door. Just in time!

* I took the young women to the temple to perform proxy baptisms and the next day we all went swimming at the clubhouse in the cold wind.

* After coordinating a big, stressful event in the Tabernacle, I stayed in my pajamas the next day until 1:30 and then only left the house when Dave insisted we go out for dinner.

* I made a YUMMY chocolate cake with avocado. Check out the fabulous recipe at Joy the Baker, from whom I also stole the picture. I didn't have enough fruit to make bright green frosting but the cake was still super good!

* And tomorrow I start poking myself for round 3. Cross your fingers and toes that it all works this time!

What to do with a Turkey

I had this extra turkey in the freezer from Thanksgiving and finally decided to cook it up. Three hours in the oven while I worked outside in the yard and VIOLA! A beautifully cooked bird. But how do two people eat a 12 pound turkey?

(I guess we could have had a party and shared, but we didn't.)

Over the course of the next few days we ate it with wild rice, snacked on it cold out of the fridge, made it into sandwiches with my oh so delicious cranberry-apple-serrano-pepper jelly, baked it into a turkey pot pie, and my personal favorite dish, a classic turkey salad on white bread.

That last dish was so good I had to take pictures and share the recipe (which I made up my self).

Turkey Salad for Sandwiches
1 1/2 - 2 cups cubed turkey
1/3 cup re-hydrated craisins (boil them in a little water till they plump up some)
2 stalks diced celery
1 thinly chopped green onion
1/3 cup mayonnaise (or add more to your liking)
salt, black pepper, celery seed to taste

Slap on some bread and enjoy.

The Background Information & The Players:
Dave singed up to attend the annual Dental Seminar in St. George. Usually his family, being a family of dentists, goes down too. This year they all had other plans so I invited my parents. They brought along three other stowaways. Together, with our little dog, we all had a blast!

The Weather Report:
The sun was out, the sky was brilliant blue, not a cloud in sight. But the temperatures were cool and the wind ferocious. Still, it beats the snow we missed at home.

Live Taping

I don't typically have the chance to watch KSL's Studio 5 lifestyle show because of my job. But today I had the opportunity to go to their very first live studio audience taping!

Me and 700 other women at their makeshift off-site location on stage at Hale Centre Theatre.

And they gave us gift bags filled with treats from The Sweet Tooth Fairy and funky earrings.

It was a great start to the weekend!

We were like two kids on the loose in the Magic Kingdom and had so much fun! We came home exhausted with blisters on our feet and sunburned noses, but never once thought about work or our callings for three whole days. It was a much needed, much deserved break.

This weekend I had the unique opportunity to scan tickets on the east ramp of the Conference Center at a couple of general conference sessions. This morning our office intern and I showed up at our post there on the ramp and noticed we had a very similar color scheme going on with our clothes. I was wearing a purple blouse with a black sweater and grey skirt. She had on a black skirt, grey blouse, and purple sweater. We laughed when we saw each other -- great minds think alike!

A few of the sisters who came in mentioned our matching clothes. Then just as the morning conference session was about to begin, the presiding authority walked toward us. He pointed to me and said, "Lavender." Then to the intern, "Lavender." And then at his own tie, "Lavender!"

Yes indeed, great minds think just alike!

We celebrated Dave's birthday last week with a delicious chocolate cake (by Megan). Dave spent his birthday at the dental convention downtown so we thought it only fitting to decorate the cake with a giant molar and toothbrushes. He LOVED it!

Did you know that my sweet husband is very hard to shop for? He doesn't need clothes. He really doesn't have very many hobbies - other than his iPhone. He would rather rent a movie than own a movie. What was I to give him for his birthday?

I ended up with a few gift cards which are great but they don't have any substance to them and I wanted him to be able to open some presents on his birthday.

The night before I began rumaging through the house trying to find things I already had on hand that would augment the gift cards.

I paired the iTunes gift card with a maraca and flute from the toy chest, a CD off the shelf, and Dave's own iPod. He was pretty excited to be re-gifted the iPod.

The Brick Oven has finally made it up our way to Layton and we've been needing an excuse to go try it out. This gift card came complete with a Macaroni Grill pasta dish, ranch dressing, and Dave's favorite candy bar.

And our season passes to Seven Peaks Salt Lake landed at the bottom of the bag under a bottle of water, Dave's favorite pair of goggles, and a blow-up toy for the pool.

Silly, I know. But it was a very good day for my very great man!

Still Here

I know what you're thinking. Where have you been?

Life is so incredibly busy and stressful right now. You know the saying that goes something like, "it is not requisite that a man should run faster than he has strength"? That is how I have felt over the last few months - trying to run faster than I have strength.

We shuffled up our departments at work and now I feel like I have twice as many events as I used to have. My days are crazy trying to just keep up with it all. General conference is just a few short days away and I still have so much to do.

Young Women's has also had its ups and downs. I don't know if I ever mentioned it... Last summer the stake split our ward. But President Packer would only approve the division if our youth stayed together for mutual activities. I love getting to see all my girls each Wednesday. They are so good for each other and I know they are helping one another to remain strong and true in the gospel. Sometimes it is a little more difficult bringing together the leaders. I worry so much that I am stepping on the toes of the other ward's leaders. I want to be good friends with them and work well with them for the sake of all our youth. Sadly, the ideal is not always achievable.

Then comes the stress of Dave's dental practice. My heart is there. I wish I had the time to really focus on building it up and bringing in patients. I would find new ways to advertise, run specials, bring his office up to the electronic age, and more. It is my duty as his wife to be his business partner but right now I don't have more than 20 minutes a week to think about it.

The fourth, and most debilitating, stress in my life these days is a little thing called infertility. I bet many of you--all my hundreds of devoted readers--have been wondering why we don't have any children yet. We found out just over a year ago that we were going to have some problems getting pregnant. After many tests, surgery, and a few months of healing, we finally went through an in vitro cycle. Things didn't go as well as we had hoped and at the end of the cycle the results were negative. We were devastated but decided to move to a new doctor and try again. Last month we started the process for a second time with a new protocol of medications. When things didn't look any better than the first time, the doctor canceled our cycle. He put me on a new medication for a few months, which will hopefully improve conditions, and then we'll give it another go sometime this summer. Dave and I never thought infertility would be one of the challenges we would face. It has taken a toll on our emotions. Sometimes it is all we can do to stop our moping and think about the many good things in our lives -- and there are many good things. Such as lots of nieces and nephews whom we adore!

Yes, I am still here. A little worn down but definitely here.

Once again our ward was very generous this year at the Young Women and Young Men annual Thanksgiving Box Scavenger Hunt. We were able to fill SIX boxes to overflowing with cans of vegetables, fruit, yams, stuffing, potatoes and gravy, turkey, rolls, and all the fixings for pumpkin pie.

Virtue Project

Back in January 2010, as a Young Women group we made it a goal to read the entire Book of Mormon this year as our Virtue Project in Personal Progress. Then in May our stake president challeneged us to finish the Book of Mormon by November 21, the day of our next stake conference meeting.

I am happy to report that I accomplished that goal - about 30 minutes before the general session of stake conference began!

And as I finished the last chapter in Moroni, I also finished this beautiful Book of Mormon Reading Chart flower.

I am so grateful for the Book of Mormon and the strength and power it gives me as I read and study its words. I know that it is true and that it helps us to know and keep the commandments of God. Through the beautiful words of these ancient prophets we can feel the love our Heavenly Father has for each of His children. I know I am a daughter of our Heavenly Father and that He loves me, and I love Him.

Good Works Project

Last night I finally finished my cookbook! Okay, maybe it's not exactly "my" cookbook because none of the recipes are my own creations. Rather, it's a compilation of pages printed off the internet and torn out of magazines.

I started it over a year ago, just trying to organize things. You can imagine how excited I was to learn that one of the Good Works projects for Personal Progress is to collect recipes and prepare meals for your family. That extra motivation was exactly what I needed to finish, even if it still took five months to get it done.

Now, the plan is to cook each and every recipe in the book and determine if it really is tasty and worthy of keeping. I'm making good progress -- I've completed four recipes just this week. This is a Young Women's project Dave is actually enjoying!

Month in Review

This month of October has been so busy. Hence the severe lack of posts.

It started with General Conference, followed immediately by the Military Chaplains Seminar. Then came a week of rehearsals and concerts for the Suzuki Celebration (check out the Deseret News article here). By the time that event finished up I had worked five 6-day weeks in a row, only having Sundays free.

On top of everything going on at work we've had Wednesday mutual activities and Thursday volleyball each week in October. Needless to say, I haven't seen much of my husband this month, let alone my blog.

Gratefully, I was able to use all my exchange days at once and had four heavenly days off work last week. Unfortunately for the blog, those days were filled with catching up on housework, shopping, spending time with my mother, and going to doctor's appointments. Busy.

Next month doesn't look any quieter what with El Salvador del Mundo, Savior of the World, Temple Square Performances Christmas Concerts, the Thanksgiving holiday, etc. I should apologize in advance if you don't hear from me again soon. That's just life right now.

Look Who I Saw at General Conference

Elder Ryan Hinckley!

I have been so anxious for General Conference ever since I learned that the MTC Elders were coming to sing at the Priesthood Session and that Ryan would be part of the Choir.

We had several chances to chat during breaks in their rehearsal. Poor kid is getting over a cold but other than that he is doing really well. He is loving the MTC and can hardly wait until his visa comes through so he can finally be on his way to Brazil. I met his companion, Elder McCann, and Elder Embree who is the same district at the MTC.

The Elders performed beautifully and powerfully. What a wonderful experience for them!

After the session ended I had to return a confiscated item to one of the elders (nothing bad, it was just a cup of candy bars) in the choir loft. By the time the item was returned I realized Ryan had already left and I might miss saying goodbye to him. I hurried as fast as I could past the mass of elders, down the long hallway that would lead back to their buses, and there he was, waiting for me.

I gave Ryan a big hug, told him I loved him and wished him a good mission. Then he turned and was gone. It was all I could do to hold back the tears. I wanted so badly to run away and sob. I am so grateful for the opportunity I had to see him and talk with him but it was so hard to say goodbye...again.

I know he is going to be a wonderful missionary. He has such a strong testimony and has been looking forward to this time of his life since he was small. We'll be praying for him and we'll see him again, in two years.

This has been such a hard, emotional year with all the stones I have come up against. But, lately I have felt like this is part of my test, my refiners fire. And this quote just reemphasized those feelings.

Banff National Park

At the last minute Dave and I were able to join his family up in Banff National Park in Alberta, Canada for a few days. It was pretty cool to have the entire family together, if just for a day!

Below you must endure our entire travelog (I'm just trying to makeup for my lack of posts lately).

After a two-day journey we arrived late Wednesday afternoon to find a quiet campsite -- the family was off enjoying the sites of the Park. Dave and I setup our tent then decided to go into town for dinner -- yes, we camped. :(

Thursday we enjoyed a pleasant morning at camp before heading off to Lake Louise. Dave has been telling me stories about the Teahouse restaurant there ever since our first date. We joined the rest of the family and made the three-plus mile hike up the mountain to the fabled Teahouse where we enjoyed $6 chocolate cake and peppermint tea. Let me tell you, that $6 chocolate cake was totally worth the price and calories after that long hike. Yummy!

Friday Dave's family packed up and headed for home. We decided to stay another day because there was still so much to see in the Park. Natural Bridge was our first stop, then we spent an hour canoeing on Emerald Lake. Finally we made it to Takkakaw Falls -- the most amazing waterfall I have ever seen!

Saturday was my birthday. It started off packing up our campsite. I have decided that what I really dislike about camping - besides the cold temperatures at night - is having to take down camp. Everything is so dirty and nothing fits the way it should in its original packaging. So once you get home you have to set it all up, clean it out, and then take it down all over again. Seriously not cool.

Anyway, it took us something like two hours or more to put it all away. Next we headed out to Johnston Canyon and hiked up to Lower Falls and Upper Falls. After a quick lunch at a nearby picnic site we then hopped on to Hwy 2 and began our two-day journey home.

Despite camping it was a very fun trip. We had a blast and we'll be back sometime soon -- but maybe this time in a hotel or a camper.

I actually came home a day early from Girls Camp to have a little out-patient, in-office surgery. Nothing major and I'm doing well -- so well we even went out to lunch on the way home. Hopefully this procedure will help us get pregnant now.

Dave was loving snapping pictures of me coming out of the sedation. I was out of it enough to not even realize what he was doing. Later in the day I learned that he had already sent this picture to half of his phone book. Sweet husband, isn't he.

Moving Sheep

Dave wanted to test out his new set of wheels recently by taking a little day trip up the mountain. We eneded up at Mirror Lake on a very cold and overcast afternoon. After a very quick picnic we decided to drive home via Evanston and got stuck by two herds of sheep. You really haven't lived until you have heard surround-sound bleating. Pretty cool!

One day in July Dave said, "Let's go camping this weekend!" Now, we all know how much Chelsea loves camping (please note the sarcasm). But she just groaned and muttered, "Okay."

As the week wore on, Dave didn't say very much more about the weekend camping trip. Chelsea hoped he had forgotten.

Thursday night he sat her down on the couch for a serious discussion. "Oh no," thought Chelsea, "here it comes. I'm going to have to camp with him afterall."

Much to her surprise, Dave sat her down on the couch and, holding her hand, said, "I know we were supposed to go camping this weekend. How about if we go up to Logan instead and stay at the Anniversary Inn?"

Did he really have to ask?

So, we used a gift certificate and booked La Hacienda room. It was the very best camping trip I have ever been on!

The next day we drove around Cache Valley and ended up at Martin Harris' grave, among other places. I hope we keep camping like this the rest of our lives!

Playing Down South

Over the Pioneer Day weekend Dave and I took a little road trip to Cedar City for my 15th Annual trek to the Utah Shakespearean Festival.

On the way down we stopped at Cove Fort. Believe it or not, it has been probably ten years since I toured this family estate. I enjoyed showing Dave my roots and later correcting some of the erroneous stories told on the tour.

Then it was on to Scottish Night at the Festival's Greenshow and afterward we saw "Great Expectations, the Musical." It was really good! I enjoyed it much more than I thought I would. The songs really helped to tell the story and most of them were even fun. My only complaint is that the finale ended on a minor note instead of the upbeat happily-ever-after that I always prefer in a musical.

The next day we went on a backstage tour and then took a journey up the canyon and found Navajo Lake. Unfortunately, it started raining while we were there so we didn't stay long. But Dave did teach me how to skip rocks. After a few practice runs I finally got one to skip three times!

That night we saw "The 39 Steps" at the Festival. It was funny though I think it would have been even funnier if I were a Hitchcock fan--which I'm not. The highlight of the night was running into Fred Adams in the lobby. I pointed him out to Dave and before I knew it my husband had walked right up to Fred and introduced himself to the Festival's Founder. After Dave confessed to being a first-year patron, Fred graciously and emphatically invited him to come back again. (Way to go, Fred! That was my ticket to the Festival for the rest of my life! A personal invitation from the man, himself! How can Dave say no to that?)

Saturday morning we had front-row seats at the Cedar City Pioneer Day Parade. It was way bigger than I was expecting it to be. I loved a couple of local wards that had their own versions of a Drill Team and Drum Corps -- power drills and upside-down plastic buckets. They went all out and even had choreographed moves. Across the street at the park Dave enjoyed the small airplane on display while I watch some eager kids topple into the dunk tank. Then we enjoyed the best kettle corn I have ever had. Yummy!

My parents drove into town early in the afternoon and we all went to "Much Ado About Nothing." Hands down the best performance of the weekend. I absolutely loved Kymberly Mellen and David Ivers as the lead characters. They were wonderful and had amazing chemistry as the love-hate duo. I really want to go see this one again.

After the show my aunt and cousin met us for dinner and we all went to "Pride and Prejudice" together. Another great performance at the Festival!

Though we had to rush home Sunday morning to get to Church, it was a wonderful and relaxing weekend and so far the best trip of the Summer!

Girls Camp

We spent four fun-filled days at the Aspen View Camp off Exit 150 on I-80. The girls had a blast and so did I, despite the rain.

You should have seen the thunderstorm that hit us on Thursday afternoon. Torrential rain, pea-sized hail, lightening, thunder crashing right above our heads, a small storm-caused wildfire a few miles up the mountain, rivers of water running through camp. Crazy!

But then it all dried out and the Bishop made it to camp for our testimony meeting. He even joined in a round of Sally Walker!

Busy Summer

I may be lacking in the number of posts I've done this summer but it isn't because the summer has been quiet. On the contrary, we have had non-stop fun and entertainment. Literally!

I don't have all the pictures on me now but just you wait. A virtual smorgasbord of fun and exciting things that have happened at the Huffaker's house is on its way. (Just give me a few days to get it all posted!)

New Linens

I have been wanting new bed linens for ages. Something a little more modern, sophisticated, pretty. I found this at Macys.com (and by the way, it is $40 cheaper now than when I bought it). After sitting in the living room for three weeks, we have finally put it on our bed.

I really love it! The set came with 24 different pieces, including the sheets, comforter, bed skirt, pillow shams, throw pillows, and curtains (which I still need to hang).

Now, all I need is more modern, sophisticated, and pretty bedroom furniture and we'll be set!

Book of Mormon Late Night

This holiday weekend we hosted our very own Grape Stomping Festival ... well, sort of.

We cut down the neighbor's grapevines that grow into Mom's yard and get in the way of the swingset. Then we had to stomp them down to get them to fit in the garbage can. Everyone helped and had a blast!

I have made some pretty dishes lately for dinner!

Our Sunday dinner, crockpot Pot Roast was so incredibly tender and the pretty plate made for the perfect presentation!

This is my very own version of guacamole and I LOVE it!!! Take a little avocado, red pepper flakes, cumin, salt, and dried or fresh cilantro. Blend it all together and top it on a thinly sliced tomato above a crisp tortilla chip. A tasty little appetizer (but don't let them sit too long or the chip will go soggy).

Like Losing a Loved One

Dave's little Ford Escort has finally bit the dust. We had a tow truck come haul it away today. Poor guy was really choked up about the whole thing. You would have thought someone in the family died.

This is Dave's brave face as he says goodbye.

It served him well for nine years through dental school in West Virginia and residency in Colorado. He will miss it. While I am happy for the new addition in our garage - a 2006 Chevy Malibu in gold.

Earlier than the Pioneers

We FINALLY planted our garden. Yes, it is already June 26th and the odds of getting a harvest are totally against us. But hey, the pioneers didn't start planting crops until JULY 26 or so after they arrived in the Valley and they still had a good harvest. We're a whole month earlier!

(I know what you're thinking...it's really too shaddy back there to have a garden, but we're going to try. If it fails, we'll be planting a tree next year.)

To Do List

Yesterday I sat down and wrote out all the things that need to be done within the next week or less at home and at church. Then I wrote down all the things I want to do before the Summer ends and all the projects that need doing at our house sooner than later.

Let's just say I have never seen such a long To Do list. Ouch! And what's worse, I am certain I inadvertently left some things off the list. Also, let's not forget the things that need to be done again as soon as you check them off the list...dishes, laundry, vacuuming, etc. (I thought this weekend would be quiet, guess not.)

Busy Weekend

This has been one of the busiest, longest weekends on record.

It all began early Thursday morning as I took four of my Young Women down to Snow College for Youth Conference. We had a GREAT time and even took in the Manti Pageant while we were there. But we sure didn't get much sleep.

I had about two hours back at home on Saturday before I turned around and went in to work for a concert in the Tabernacle. Everything went very well with my event but the after-concert reception didn't end until almost 11:45 pm!

After a third short night in a row it was off to ward counsel meeting on Sunday, then the three-hour block meeting, followed by Father's Day visits to my dad and Dave's.

Needless to say, I am still extremely exhausted after this very busy weekend. Hopefully next weekend proves to be much more quiet.

Ensign Peak

Yes, it's true. I have lived my entire life in the Salt Lake Valley and until Sunday I had never hiked up to Ensign Peak. I really don't know how it escaped me for all these years, but it did.

Dave's grandma Huff lives near the trailhead and we were early for Sunday dinner so we decided to take a little stroll and work up an appetite. It took us about 15 minutes to get up -- with me in a long skirt and dress shoes -- and we got back just in time for dinner.

What a pretty view of the Valley from up there! I'm thinking we're going to have to make a YW activity out of it in the near future.

Romantic Movies

I dragged Dave to a movie last night - yes, to a chick flick. It wasn't the greatest movie I have ever seen but it had a happy ending. (And no one died, no guns, swords, explosions, nuclear weapons, etc. which is reason enough to celebrate.)

Dave typically only tolerates my type of movies - just as I only tolerate his. He always mocks them once the credits start to roll and pretends he enjoyed the last two hours full of love and frivolity.

I got to thinking after the movie that husbands should be more willing to go to chick flicks. You see, watching others in love and seeing happy endings usually puts wives in a more euphoric mood, and that can only mean good things for husbands. Next time your husband complains about seeing something romantic, remind him that a combination of his good behavior and the romance on the screen may be to his benefit in the end. How can he say no to that?

Fun Day at Sea - Day 7

Dave and I hung out all day and made our rounds aboard the ship - including a tour of the kitchens. It was a little bittersweet knowing today is the last day. We sure did have fun living in this fantasy world where people serve you three meals a day, make your beds twice a day, and where cell phones are completely obsolete. We can hardly wait until we can take a cruise again!

Grand Cayman, BWI - Day 6

It poured rain all day long here at Grand Cayman. The local people said they really needed the rain but it spoiled our day. We were supposed to go on a Pirate Adventure in honor of the many pirates that stationed here. However, the Adventure was canceled because of the rain.

Still, we made lemonade out of lemons and decided instead to see the town. We jumped in a taxi van and took a grand city tour - in the rain. What we saw of Cayman was beautiful. It is definitely a place I would love to see again - without the rain.

Isla Roatan, Honduras - Day 5

Today was also a relaxing day spent with Dave. We bought tickets on the sky ride and landed at Mahogany Beach where we played in the water and slept under the sun. While I browsed the port shops Dave went on a zip line adventure. I have always wanted to go to Honduras (because most of the people in my mission were from there). I don't know if this American-influenced island really counts as having traveled there, but it was fun to be so close and to meet some of the local people who were all so very kind.

Belize - Day 4

Sorry about the lack of pictures from Belize. While all others in our party went out on excursions, I made a quiet day of it. I did a little shopping at the port, then back on the ship I took a leisurely lunch followed by a few hours of reading by the pool. Not a lot of opportunity for pictures but it was one of my favorite days at sea.

I finished the first book in the series and got a good start on the second book. These are the adventures of four unusually talented children who work together to solve mysteries and help the adults in their lives. The first was good but got slow at times; the second is a page-turner. I recommend them but you have to read them in order.

Cozumel, Mexico - Day 3

Today we docked at the pretty island of Cozumel, Mexico then boarded a ferry that took us to Playa del Carmen on the mainland. From there we traveled to the amazing ruins of Tulum, an ancient Mayan civilization built on a beautiful stretch of beach. Seeing this crumbling city made me reflect on the people from the Book of Mormon. Tulum was built after Moroni buried the plates but the people who lived here were descendants of the Nephites and Lamanites. Just seeing these old ruins really brought that sacred book of scripture to life. Amazing!

And while we were there I sampled some of the local fare. Delicious! Dave wouldn't try it -- worried about parasites and such. Boy did he miss out, but there was more for me!

Cruising - Day 1

Dave and I are taking a vacation from reality aboard the Carnival Glory (with his parents, brother and sister-in-law). We'll be sailing around the Caribbean for the next 7 days, seeing new places, eating fine foods, relaxing and forgetting the cares and worries of home. But the very best part of all is that our cell phones do not work. Hallelujah!

Last year Dave felt really bad that he did not get me a Mother's Day gift (and yes, I realize that I was not a mother then nor am I now, but someday I will be). So, he made up for it this year by giving me these gorgeous roses (his are the red and the yellow is from church) and a little shopping trip to Deseret Book to pick up a few things for our upcoming trip. What a guy!

Dave and I went to West Virginia for the weekend and had a great time! While there we celebrated his 5-year reunion with fellow dental school classmates and saw the town -- Morgantown, that is.

It was fun to see where Dave spent four of the hardest years of his life. He relived many memories as we visited some of his old haunts. Morgantown is beautiful and WVU looks like a great place to go to school. It is too bad I missed those years with Dave but I am glad I was able to see it all with him now. And we are already making plans to go back in another five years, or less.

Some people think I am my mother's daughter and bake all the same great rolls and bread and cookies that she makes. I think I have the cookies down and I have been semi-successful in the roll department but I have never made bread. Until now.

This week my mom talked me into going to her Relief Society Bread Making Class and then forced me to put together my own batch of bread. All was going well, and you would have thought I had done this before, until I started talking to my table-mate. Suddenly, I had way too much flour in the mixer and the dough turned dry and crumbly. I added almost half a cup of water before it returned to the right consistency. But the bread baked up beautifully and tastes just like Mom's -- and it was really easy to make.

First Anniversary

Dave and I have made through our first year! And we are still madly in love!

To celebrate he took me back to the restaurant we ate at on the night we got engaged. Then we spent the night in the same bridal suite. Dave planned it all months ago and kept it a great surprise. What a guy! I'm pretty darn lucky he is mine!

Sour Cream Cookies

I found this recipe today as I flipped through Betty Crocker's Cookie Book and decided to make them for Megan's bridal shower. They were a hit! All 4 dozen cookies were gone well before the shower ended.

SOUR CREAM COOKIES
1 1/2 cups packed brown sugar
1 cup sour cream
1/2 cup shortening
1 teaspoon vanilla
2 eggs
2 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans (optional)
Browned Butter Glaze (below)

Heat oven to 375 degrees. Beat brown sugar, sour cream, shortening, vanilla, and eggs in large bowl with electric mixer on medium speed. Stir in flour, baking soda, and salt. Stir in pecans.

Drop dough by rounded teaspoonfuls about 2 inches apart onto greased cookie sheet. Bake 8 to 10 minutes or until almost no indentation remains when touched in center. Cool 1 to 2 minutes; remove from cookie sheet to wire rack. Cool completely. Spread with Browned Butter Glaze.

BROWNED BUTTER GLAZE
1/3 cup butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
2 to 3 tablespoons hot water

Heat butter in 1-quart saucepan over low heat, stirring occasionally, until golden brown; remove from heat. Stir in remaining ingredients until smooth and spreadable.

MAKE IT YOUR WAY
For apples and spice and everything nice, try APPLESAUCE COOKIES. Substitute 3/4 cup applesauce for sour cream. Stir in 1 teaspoon ground cinnamon, 1/4 teaspoon ground cloves and 1 cup raisins with the flour.

Warm-up to tropical flavor with COCONUT-SOUR CREAM COOKIES. All you do is substitute shredded coconut for the pecans.

You can't work for peanuts, but you can put them in your cookies! SALTED PEANUT-SOUR CREAM COOKIES are easy to make, just substitute salted peanuts for the pecans.

Old-fashioned flavor can be found in SPICE-SOUR CREAM COOKIES. Mix 1/2 cup granulated sugar, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground cloves; sprinkle over cookies before baking. Omit glaze.

Comfort Movie

We all have our "comfort foods." Mine would be pancakes, grilled cheese sandwiches, and warm chocolate chip cookies.

The other day, after a particularly straining afternoon, I wanted comfort. But I didn't really want to eat (actually, I didn't want to cook and make a mess of the kitchen). So instead I found the perfect "comfort movie," The Sound of Music. That was exactly what I needed. It lifted my spirit and made everything better -- and the very best part of all was it was calorie free!

It is fascinating to watch them travel around the world tracking clues and discovering who their anscestors are. I love it! Egg Explosion

We were chatting away about life during mutual tonight as we waited for the eggs to cook before we decorated them. All of the sudden, a loud bursting sound came from the pan on the stove and foam rolled over the sides. On closer investigation we found that 9 out of 12 eggs had broken in the explosion!

We don't know what happened...maybe the water was too hot, maybe there was too much water, maybe some of the eggs broke as we put them in the pot.

Lucky for us, we had a spare dozen eggs in the fridge. So, we cleaned up and started over. Definitely an activity to remember.

So much to do, So little time

So, I am sitting here at my desk listening to the Young Women Auxiliary Training that is going on right now in the Conference Center Theater. Thanks to a closed-circuit TV signal, I get to keep working while attending to my calling.

Despite the inspirational messages and idea-sharing, I am feeling like a horrible Young Women leader. These sisters are talking about how they cultivate unity in their groups, how they are doing all these big wonderful activities that are centered around the gospel, and how their girls are growing into steadfast righteous Young Women.

I wonder sometimes what good we are doing with our girls. I have absolutely fallen in love with each and every one of my six girls and I want them to be happy, righteous Young Women who make the temple a priority in their lives. Every Sunday we try to tailor the lessons to them and their needs. Every weekday activity we try to plan with a purpose. But, are we really making a difference? Are they listening even when it doesn't look like it? And what do we do with our Beehives who think that YW is optional?

I guess I feel like there is a lot riding on this calling. These girls are in some of the most critical years of their lives and they have been entrusted to my care to help them stay on the path of righteousness. I do not want to arrive on Judgement Day and learn that I didn't do enough. That one of them strayed and I should have been there to help her. It's scary.

All I can do is pray for help and inspiration. My class will not and can not look the same as all other Young Women classes throughout the world. As long as I keep seeking the Lord's help and inspiration, we will know what we should do for our girls to strengthen them and lead them back to their Heavenly Father.

Piano at a Price

Mom has inherited grandma's piano but has no place to put it, so Dave and I consented to be its temporary custodians.

On Saturday we rented a U-Haul Truck and brought it over to our house. Then, I spent a couple of hours cleaning it. And it was incredibly dirty.

Half a bottle of Pledge, a once-white-now-totally-black-rag, and ten sore fingers later and it truly is a beautiful addition to our home.
